10 years ago I didn't know what a taro was. As a NZ born Samoan, that's embarrassing to admit. But it's the truth. I didn't learn how my ancestors cooked from watching my family. I learned it from textbooks. The umu is a traditional Samoan earth oven. It works by heating river stones over a wood fire built with dry coconut husks. Once the stones are hot enough, the food gets layered on top. Taro, breadfruit and banana go on the bottom where it's hottest. Palusami and smaller packages go on top.
