I recently had some whipped tofu from Supa Ya Ramen that blew my mind, and I was desperate to make some myself and put it to use in a creamy vegan salad for you all. I've used smoked tofu for depth, then topped it with roasted aubergines and charred spring onions coated in a sticky teriyaki sauce. This is plate lickingly good.
