Rub your roast with your seasoning of choice, such as salt, pepper, garlic or herbs. 3. Place in a shallow baking dish and add a small amount of liquid on the bottom. 4. Cook 12-15 minutes per pound, until the meat reaches around 130 degrees. 5. Let rest 15-20 m
